Eggs straight out of the chicken coop is one of life’s simple pleasures. The yolk is such a deep yellow that it puts the store-bought eggs to shame.
Benefits of Farm-Fresh Eggs
- They are better for you. Eggs from free-range chickens have higher levels of vitamins.
- They have a longer shelf life. Farm-fresh eggs can sit at room temperature for many weeks without going bad because they have a protective coating called bloom on them. I like to keep mine in a basket on the counter. Once washed, the eggs must be refrigerated because the protection is washed off.
- They are fresh. No transportation time or sitting on the grocery store shelf. The egg goes from coop to kitchen.
- They come from happy hens. Our chickens are well loved and are free range so they are living a good life. Knowing my eggs come from a happy hen makes me happy!
One way to eat eggs is to hard boil them. Here are the steps I take to make hard-boiled eggs that are easy to peel.
How to hard boil fresh farm eggs
- Boil water in a large pot. Put enough water to cover the eggs by at least an inch. Carefully lower the eggs into the boiling water.
- Lower the heat and simmer the eggs (with lid on) for 5 minutes. Turn the heat off but leave the pot on the hot burner for at least 20 minutes.
- Carefully drain the water and run cold water over them to cool them off.
- Drain the water and gently shake the pot (with lid on) to crack the eggs. The cracked shells will then slide off easily.
