These chewy no-bake peanut butter granola bars include oats, nuts, and seeds combined with coconut oil, honey, and peanut butter to hold it all together.

As a homeschooling mom, I like to have healthy snacks on hand that the kids can munch on while doing their school work. These chewy no-bake granola bars can often be found in our fridge as we make them over and over again. They include many nutritious ingredients, and I feel better when my kids eat these instead of the store-bought bars.
Ingredients in Granola Bars
- Coconut oil. Studies have shown benefits of using coconut oil. Read about it here.
- Honey. We harvest our own honey and know there are many benefits to eating raw honey, some of which you can find here.
- Peanut butter. Peanut butter works to help make these bars stick together and is a source of protein.
- Old fashioned oats. Oats are a great source of vitamins and minerals and have many health benefits. If interested in learning more, you can read about it here.
- Nuts, Seeds, and Fruit. I use sliced almonds in this recipe but you could switch it out for a different nut. Sunflower seeds are a good addition to granola bars since they are high in protein and rich in healthy fats. Coconut (is it a fruit, nut, or seed?) also has health benefits and can be found in this granola bar recipe. I didn’t include dried cranberries in this recipe but we sometimes add them, and they provide a touch of fruity sweetness that my kids like.
- Chocolate chips. For fun! Who doesn’t like a little chocolate in the mix? If you’re not into chocolate, simply replace it with more nuts, seeds, or coconut.

How to make chewy no-bake granola bars
- Place all the wet ingredients in a medium-sized pot, and heat until melted and well combined.
- Measure all the dry ingredients into a large bowl.
- Pour the wet ingredients over top of the dry ingredients and mix together. *If you do not want the chocolate chips to melt, allow the mixture to cool in the pot before adding to the dry ingredients.
- Spread on a pan and chill in the refrigerator.

These granola bars are very easy and quick to make. This is another great recipe that kids can help with or even make on their own! We like to keep these chewy granola bars in the fridge or freezer as they get pretty soft when kept at room temperature.

Chewy Granola Bars
These chewy granola bars are easy to make and are a staple in our home. They make a great snack!
Ingredients
- 2 cups peanut butter
- 1 cup coconut oil
- 2/3 cup honey
- 4 cups old fashioned oats
- 1 cup unsweetened coconut
- 1 cup sliced or chopped almonds
- 1/2 cup sunflower seeds
- 1/2 cup whole or ground flax
- 1 cup mini semisweet chocolate chips
Instructions
- Into a big bowl, measure the old fashioned oats, coconut, almonds, sunflower seeds, flax, and chocolate chips. Mix to combine.
- In a medium pot, melt the peanut butter, honey, and coconut oil.
- Once melted, pour this mixture over the ingredients in the bowl and stir to combine. If you do not want the chocolate chips to melt, let the mixture in the pot cool before adding it.
- Press into a greased cookie sheet and chill for two hours.
Notes
- Other nuts can be used in place of almonds.
- If you do not want to use chocolate chips, simply replace them with more of the nuts, seeds, or fruit.
- These bars get soft at room temperature so keep them in the refrigerator or freezer.
